January 26, 1952 Didn't Even Cry, Escaping Colds, Thinking About Sewing, A Case of Eggs and Favorite Pecan Pie


Dear Mother & Daddy,

"This has been a busy day even if I didn't get anything much done.  We took Bobby to the doctor for his yearly check-up so I spent the morning getting ready for it and the afternoon in the doctor's office.  We always have to wait so long.  He weighs 38-3/4--a gain of 6 lbs. and has grown 2 inches in the last year.  He is perfect physically and was so good.  They gave him a booster shot for whooping cough, diphtheria and tetanus and he didn't even cry.  The nurse then gave him a story book for being so good about it and that really pleased him.

I am baking a pecan pie.  I wish you could come over and help us eat it.  Toni made a cherry cobbler last night out of frozen cherries and it was delicious--so much better than canned cherries.

B has had quite a cold this week and my throat has been sore but not enough to get me down.  The children seem to have escaped it--I hope.

We haven't done anything extra this week.  It is the last week of the semester so B has graded papers and given exams all week.

I haven't done any sewing since before Christmas but keep thinking I'll start something.  I have quite a few pieces of material put away but most of it is summer goods.

We bought a case of eggs from a student this week at .35 a dozen.  She had been bringing us two or three dozen every week but will be in another town for nine weeks now to do her practice teaching.  The case won't last us that long but will be better than buying at the store.

Note lower enrollment of 1960 students

NOTE:  There were changes in the G.I. Bill benefits in 1952.  Veterans of the Korean War were given a monthly sum of money with which to help defray costs for education, housing, etc.  rather than a government payment made directly to a university for tuition and fees.  This in part, probably accounted for the lower enrollment at ISNU in 1952.

Favorite Pecan Pie

Mix together 1 c. white corn syrup, 1 c. dark brown sugar, 1/3 tsp. salt, 1/3 c. melted butter and 1 tsp. vanilla.   Add 3 eggs, slightly beaten.  Pour into a 9" unbaked crust.  Sprinkle on at least 1 heaping cup of pecans.  Bake 45 min. @ 350.
