August 26, 1947 New Stationery, Bursting Gardens, B Loafs and Plays and Apple Pies

Dear Mother & Daddy,

"We have had supper and it is rather warm inside so I'm writing this in the yard.  Our apartment stays as cool as any place but is always warm around suppertime.  There has been a good cool breeze all day but it stays hot.  We have enough rain along so the gardens are just bursting.

Dr. Richards was over early this morning with a big basket of vegetables which we enjoy.  We can buy tomatoes for .05 lb. now but his are ripe now so we may not have to buy many more.


We are looking for Karl and Aggie about noon Friday.  I'll have a little lunch for them.  I bet they'll be glad to get home if it has been as hot in Wisconsin as it has in the other mid-west states.

Saturday afternoon we went to Hartford for my regular check-up.  I'm just fine.

Saturday night we went to the home of the college dean for a buffet supper.  There were 14 of us and she had a nice supper--cold cuts, salads, baked beans.   It tasted so good.

It was too hot to do anything Sunday but sit around.  We went for a ride after it cooled off.

This is the last week of summer school and then B will have about two weeks before the fall term begins.  He doesn't plan to do much but loaf and play with his camera.  

Edith Swann is coming out to spend tomorrow  with me.  I'm not fixing much for lunch--salad, a sandwich and pie.  The crust is ready in the icebox and I'll fix the apples and bake it early in the morning so it will be fresh.  There is a tree of green apples out in the back and I've been wanting to see how they cook.

I hope you have a happy birthday, Daddy.  You should have a little package by the end of the week.

Things are beginning to look a little like fall even if it is hot.  The goldenrod is blooming and the apples are getting ripe.  Farmers are already selling them along the highways.

News is pretty scarce since we haven't done much or gone anywhere.  Hope to hear from you soon."

Apple Crunch Pie

Prepare filling:  Mix & cook till clear, 3 T cornstarch, 3/4 c. brown sugar, 1 tsp. cinnamon, 1/2 tsp. nutmeg, 1/4 tsp. salt, 1 T lemon juice and 1/2 c. water.  Mix in & let cool while topping is made, 2-1/2 c. apple slices.   Prepare topping:  1/2 c. flour, 2/3 c. brown sugar, 1/4 tsp. cinnamon, 1/4 tsp. nutmeg, 1/8 tsp. cloves, pinch salt, 5 T. oleo and 1/2 c.  chopped nuts (black walnuts preferred).  Bake 15 min. in 400 preheated oven.  Bake 30 min. more at 350.  Serve with ice cream or sharp cheese.

Skillet Apple Pie

Melt 2 T butter in ovenproof skillet.  Add 6 apples, peeled, sliced thin & tossed with 1 T lemon juice.  Cook, stir, about 15 min.  Then stir into apples, 1/2 c. brown sugar, 1/2 c. sugar, 1/2 tsp. cinnamon, 1/4 tsp. nutmeg and 1/8 tsp. salt.  Cook until apples are tender.  Mix together 1/2 c. water and 1 tsp. cornstarch then stir into apples.  Set aside and make topping.  Mix together 1-1/2 c. flour, 1/4 c. sugar, 1-1/2 tsp. baking powder and 1/2 tsp. salt.  Cut in 1/4 c. cold butter.  Add 2/3 c. milk and 1/2 tsp. vanilla.  Drop T's of dough over apples.  Sprinkle on 1 T sugar.  Bake @ 375 for 25-30 min. or till golden.  Let stand 5 min.
