November 25, 1944 A Mighty Poor Letter, Talk About Teeth, Bonnie's Roasted Chicken, Apple Roll and Baked Marmalade Apples

Dear Mother & Daddy,

"Our nice vacation is about over.  We both got out of school Wednesday and we've really enjoyed the free time.  Thanksgiving day we had a roast chicken and all that goes with it.  It was so nice to have a day to ourselves.  We stayed home all day.  Last night we had a couple here for dinner and had a real nice time.

B is going to spend the afternoon in the library at Yale and I'm going to the public library for some books.  I may try to shop a bit.  The stores here have had their Christmas things out for a long time.

What doctor and dentist did you go to?  Do you plan to have your teeth pulled soon and where are you going to have them pulled?  Is Aunt Cliffie getting her teeth made soon?  I hope so.

My teaching is all right.  Our car heater works fine so it isn't bad driving at all.  I'm so used to it that I don't mind driving now.  Sometimes I take B to Hopkins as I go out and other times he goes on the bus.  He teaches only 2 afternoons and the other three days he teaches in the morning so he rides most of the time.

Today is cold but sunny.  We plan to drive out in the country tomorrow.  We like to buy apples and cider at a little roadside stand on the highway.  They really are good.

I guess Cliffie and George are glad the army finally released him.  Do you have any idea what they will do?  Has Edith heard from Billy?  Does Chloe still hear from Ray?

This is a mighty poor letter but there isn't any thing to write.

                                             Lots of love,

                                                    B & Bonnie

Did my lost letter ever get there?"

NOTE from Ann:  Bishop's Orchard, B & Bonnie's favorite,  is still there today.

Bishop's Orchards History
B.W. Bishop & Sons, Inc. is a family owned and operated farm corporation, doing business as Bishop's Orchards. The farm was started in 1871 by Walter Goodrich Bishop who engaged in general farming included dairy, vegetables and ice. His son Burton Walter Bishop joined him and expanded the business. In 1909 they set out the first commercial orchard. Burton's sons Arthur F. and Charles R. joined with their father in 1918 and continued to set out more orchard on land purchased in 1920 and 1926.  Source: www.bishopsorchard.com)

Easy Roast Chicken

Remove neck & giblets from cavity.  Wash & dry inside & out.  Rub with oil and sprinkle generously inside & out with seasoning salt.  Roast 1 to 1-1/2 hrs. at 400.  Let rest a few minutes before carving.

Apple Roll

Make one recipe of biscuit dough using 2 c. flour.  Roll dough to 1/4" thick, spread on 2 T melted oleo and sprinkle on 2 tsp. cinnamon with 1/2 c. sugar.  Spread on a generous layer of chopped, peeled apples.  Roll as for a jelly roll.  Cut into 8 slices.  Place in small cake pan and mash down to fill pan. Boil 1 c. sugar and 2 c. water with a dash of red coloring, if desired.  Pour over and around the rolls.  Bake in preheated 350 oven about 30-40 min.  Apples will be tender and crust brown.

Baked Marmalade Apples

Core 8 Golden Delicious apples and cut away small strip of peel at top of each.  Mix together 1/2 c. orange marmalade and 3/4 c. gingersnap crumbs.  Using all of the mix, fill each apple, rounding up on top of each.  Sprinkle 2 T sugar over apples.  Pour 1 c. orange juice around apples.  Bake @375 for 45 min. or till done.  Spoon syrup from pan over apples to serve.
