May 20 - 22, 1954 Moral Education, The Tea Service, The Hibachi and Berry Tarts

Diary Entry:  May 20, 1954

"Station meeting here so spent day preparing dessert.  Made berry tarts.  Mr. McKnight brought some of his berries.  B talked on moral education.  All stayed late."

"All went to Kobe & had lunch.  Selected our silver service, left watch for repair & ordered a ring guard for my pearls."

"After class B went to Kobe to try on suit at Daimaru.  Found a sukiyaki hibachi."





Bonnie's Strawberry Tarts with Almond Crust

Prepare crust for 8 individual tart pans.  (Lightly butter each pan.)  Coarsely grind 1 cup toasted, sliced almonds.  Add 1 cup flour, 1/2 cup sugar, 1 egg yolk & 1/2 t vanilla.  Mix well, divide evenly and press into each tart pan.  Chill 30 - 45 minutes and then bake at 375 for 8 - 10 minutes until light golden brown.  Set aside and prepare filling.

Slice berries to make 2 cups, drizzle with 1/4 cup of water and add sugar to taste, about 1/2 cup.  Let set 30 minutes and drain off juice.  Add small amount of arrowroot and a little water if needed and cook on low heat until slightly thickened.  Arrange berries in tart shells, press a little of the juice mixture over each one and chill until firm.  Serve with whipped cream.
